Mango is the king of exotic fruits, a symbol of divinity in ancient Indian beliefs. It is the fruit of the Mangifera indica, an evergreen tree belonging to the Anacardiaceae family, the same as cashews and pistachios. Each mango plant is self-fertile: essentially, it can produce fruit without the need for a pollinator, as pollination is facilitated by bees and other pollinating insects. Mango can be green, yellow, red, or a combination of the three. The flesh is very sweet, juicy, and its texture is somewhat reminiscent of peach.

The scent of mango (like that of many other fruits) is intricately structured, so recreating it requires a great deal of effort.
